We cook our sweets in traditional open copper kettles. This method allows the sugars to gently caramelize at controlled temperatures, generating a complex, warm background note that mass manufacturing simply cannot replicate.
Once poured, our master candy makers hand-pull each batch over wooden hooks to incorporate air naturally, imparting a silky sheen and velvety mouthfeel without emulsifiers.
